A well Spent Weekend

The Hubs and I had a date night Saturday night!  Date nights are pretty few and far between for us, so I'm very appreciative that my Sister In-Law came up to the house to watch the boys.  Free Sitter!!  We had gotten a gift card from Subway for X-Mas, so we went there for dinner, then it was off to the main attraction!!!

It was a great night!

Sunday has been spent around the house.  Mike has been building a sap house, and today was the day to boil for the first time.  Did you know that when sap comes from the tree it's clear?  It's doesn't get the dark color until it's boiled down.  Boiling syrup is a big deal here.  As I type, there are 5 guys hanging out out there.

While Mike was outside, I was inside doing some cooking for the freezer.  I love the idea of it.  Since I hadn't planned on doing it, I just used what we already had.  I think this will really stream line dinner time.  Since I don't get home until around 5:30pm, it always feels like it's a rush to get dinner on the table.  Hopefully by cutting out some of the cooking time, it will cut down on the stress level as well.
I cooked up some chicken, some was shredded, some was cubed.  I also froze a bag of stock from that.  I did a couple Twice Baked Potatos.  Lastly, I froze up some plain yogurt in muffin tins, which I will add some frozen fruit to and be ready for smoothies.  I didn't go by any recipes but I did use Once A Month Mom as a resource.  Check it out!

I plan on doing some Egg McMuffins, Cereal Bars, and some sort of beef this weekend.
